Shinkazu
This is one of the four types of sake called Sai.
It has the refreshing acidity and flavor of white malted rice, but the umami and depth of the rice, which is typical of sake, is restrained and refreshing.
However, it is not as refreshing as if one were drinking water, but rather the umami and sweetness of the rice can be felt in the background.
The strong dryness makes it easy to pair with food.
