This sake is from Obama City, Fukui Prefecture. This sake is made exclusively for mackerel, and as one would expect from a prefecture that loves mackerel (according to our company), it is from Fukui. Obama is the starting point of the Saba Highway, and is the center of Wakasa, a prefecture that is known as the "Land of Food" along with Ise-Shima and Awaji. Obama. Salted mackerel carried from Obama to our hometown in the Oku-Echizen region became the flesh and blood of our ancestors. Plenty of sweetness. The spiciness that follows it. I tried it with mackerel (mackerel with as little sweet vinegar as possible removed from the sweet-and-sour sauce) and something like chilled mackerel (mamakari). It may not go well with acidic foods when served at room temperature. It would be good with mackerel sashimi that is not raw sushi. How about if you warm it up? A soft sweetness comes out. The sourness of the mamakari is mellowly enveloped, and the oiliness of the mackerel is well taken care of. However, the sweetened eel han-suke-nabe matches better than the mackerel. It might be better suited to sweeter flavored dishes such as simmered mackerel or miso-broiled mackerel.
