Yesterday, we went to Sasaki Sake Brewery in Natori City for a brewery tour and study session 😄 organized by an izakaya in Sendai. It is really rare to have a chance to listen to a master brewer talk about his brewery! Sasaki Sake Brewery was damaged by the earthquake and resumed brewing the following year from a warehouse-like space! Then, in 2017, the current building was constructed! Almost the same location as before the earthquake😄. The story of what happened before and after the earthquake was truly heartwarming. Sasaki Sake Brewery uses local rice and water to make sake under the theme of "sake brewing that is closely connected to the local community. Now to the main topic! We tasted a variety of sake. And here is the main sake. This sake was made before the earthquake in March. It is a really precious sake. It looks like gold and smells like blue cheese. When you drink it, you will taste sweetness and a unique sourness. The umami comes from there. The sharpness is surprisingly good and the aftertaste is refreshing. Perhaps it is because it is a junmai sake, or perhaps it has been well preserved. I drank it while thinking about the earthquake disaster! I am glad I went because I really learned a lot!
