To be honest, I did not have high expectations, but the taste made me think I might like it a lot. It has a strong rice flavor, soy sauce, a Japanese flavor like rice bran, and a gentle fruity sweetness. The tangy taste? Some people may be bothered by the "mash" taste, but it is a very unique taste.
Maikaze from Gunma Prefecture is used. Gunma 227 yeast is said to produce a rich and gentle finish. When it was first developed, it was difficult to dissolve the rice, but in recent years, the yeast has been changing or has adapted well.
I am speculating, but I think it would be better to choose this yeast over others. I'm just making a judgment based on the label. But I recommend this one. It is a unique sake, not a trendy imitation sake.
