It was a bit gassy when it was first opened, with a bit of grapiness, I think. If I don't write about it right after drinking it, I'll forget.
After the second day, the sourness started to come out, and rather than sweet and sour, it was more like a fully ripe lemon. This is delicious in its own way.
I've had a black Yamamoto once, and I thought it was a bit crumbly, but this is solid and not crushable. It's a rather sour drink. It is strong.
Everyone buys No. 6 anyway, right? Then I'll buy No. 7! But it's not the kind of sake to drink that way. When I drank it, I wondered what the No. 6 was like. But it's not the kind of sake you drink.
I think it tasted best when it was about two weeks old. At that time, of course, it was almost gone, and I was sad to see it go... If it goes on like this, next year I'll have more sake that I want to repeat in a bottle.
