It's totally different from all the other Bodhidhashi I've had, not to mention the Kanji notation Sanomorosugi Bodhidhashi I've had before!
It starts with a gentle sweet, sour and umami, and then the umami is rich and fluffy. But the umami is elegant and classy. There is no bitterness at all, and the subtle bitterness is beautiful.

This is amazing!
It was so delicious. And when I looked it up later, I found out that this sake was a luxury sake, priced at 5,500 yen including tax. Wow. But I drank it without any preconceptions and it was delicious, so it must be the real thing.
If I were to use a Ghibli analogy, it would be the scene in "Princess Mononoke" where Ashitaka sees the Deer God for the first time. There is something precious beyond the light of the rich nature.
