No.77 yeast (malic acid) + Yamahai yeast (lactic acid) + white yeast (citric acid)! It has a lot of acidity, like a white wine. Personally, I'm not that good at the type of wine that has a lot of acidity, but if you pair it with cheese, the strength of the acidity diminishes and it's very good.
