Tonight's sake is brewed with my favorite Omachi. Floral and refreshing ginjo aroma. Nice aroma! It starts off moderately sweet, and once swallowed, has a refreshing aftertaste. It is also great with cheaply-priced ankou (red kidney beans). Even after the turban shell sashimi, the flavor of the seashore flows nicely. Despite the strong flavor of the unpasteurized sake, it was a perfect match with the food and had a refreshing aftertaste. It is a great sake.
