The brewing company has moved to Yamana Shuzo this season. (Unfortunately, I missed the Ibaraki Shuzo.)
This sake is brewed in a wooden vat with brewer's yeast and a live yeast yeast yeast. It is a very satisfying sake, full-flavored and powerful.
The acidity is very good, and the umami flavor is fully extracted. The subtle aroma of the wooden vat does not interfere with the flavor. A very easy-drinking sake.

I drank it after a month of not leaving it in the fridge to open it, but it was great, with the acidic flavor mellowing out and increasing its deliciousness!
