The aroma is deliberately kept to a minimum, with a juicy acidity reminiscent of citrus fruits and a sharpness reminiscent of Japan. After each bottle is heat sterilized, it is immediately cooled with spring water from the Shirakami mountain range, which is also used as brewing water, to minimize deterioration of the sake quality.
