They got the yeast from sunflowers. Of course, it doesn't smell or taste like sunflowers. The aroma of rice comes through the nose easily, and the mouthfeel is slightly sweet, but it also comes through easily. It's very fresh. It is not watery at all, and while it has a solid structure, it is somehow light. The balance of this lightness is superb. You can enjoy it with just sake, but it also goes well with food. Today, I served it with pickled cucumbers and myoga. I think it goes well with such refreshing salty and vinegary summer dishes.
