ラストリバーSake made with ancient rice and strawberry yeast. The acidity is very strong. Ine Mankai in Kyoto is also made with ancient rice, but this one has a slightly darker rosé color. I don't know if it is because it is made from ancient rice, but it has a unique umami taste (ancient rice contains anthocyanin, so maybe that is the reason?)
