sake brewing using natural yeast and no mashing
When you put it in your mouth, you feel sweet but sour. You can feel the sourness.
It goes through the nose quickly, but it doesn't linger and the taste disappears quickly.
The alcohol feeling that remains in the mouth is strong.
The sweetness is not enough for my taste.
I like the regular Junmai Ginjo better, so I'll buy that next time.
