Kijoshu is made with sake. This is a super kijo-shu (re-fermented kijo-shu) made with even more kijo-shu.
Shinmasa's famous kijo-zake, Yonotori, which is my favorite kijo-zake, is a little bit schwitty, but this one is super moist and extremely sweet. This one is super moist and extremely sweet. It is indeed the best of the kijo-shu. I heard that it can be matured at home, but I found it by chance at a store and had a glass of it, so I couldn't do it. I would like to buy this one. It was delicious.
