Shinsei Ecru 2021
Oboro dungeon in Shinbashi
This Ecru is slightly citrusy and lactic, not grapey or apricot.
It has a fresh and crisp feel to it.
The acidity is a bit pronounced, and the wine has the usual wood vat feel, but it is mild. Mild, with a light aftertaste.
I like ecru among the Colors, so I've tasted many lots, and there is a wide range from cedar-like to mild in all status.
It is interesting to see how different sake can be made with the same rice and the same production method.
