Hijiri-no-miyo.
This sake is from Imajo, Minami-Echizen-cho, south of the Echizen region in Fukui Prefecture.
The brewery is not a member of the sake brewers' association. However, I knew the name of the brewery because they made PB sake for a local liquor store chain.
By the way, I got it at a FamilyMart in front of Fukui Station. I found it in an unexpected place.
Firm acidity, firm sweetness.
Then a big wave of spiciness comes in.
Even when combined with the sauce, the spiciness continues to surge in like a ripple, refreshing but not overpowering. The aftertaste is quite good.
How about if you heat it up?
Sourness comes out to the full surface. The yaku-yoke tendency becomes stronger.
The spicy kick is weaker, but combined with the acidity and umami, the flavor is deeper.
It is hard to choose a superior or inferior flavor. It is a matter of taste.
The area between Sabae and Tsuruga is known as "Nankoshi" or "Tannan" in Fukui Prefecture.
Sake from the Nanketsu area, in terms of name recognition, is dominated by "Bon" from Sabae City, but there are many other local sake breweries in the area.
Nanketsu area (I lived in Sabae for about 3 years, but I wasn't a sake fanatic then. Too bad!) I have been an air pocket for sake in this area, but I think I should go out and drink all the sake I can get my hands on.
When I return to Fukui for the May holidays, I intend to buy all the sake I can find in the Nanketsu area.
