This sake is from Echizen-cho, Fukui Prefecture. Purchased at a liquor store next to the brewery. If you look carefully, the address on the label is "Asahi-cho, Niu-gun" before the merging of municipalities. It has been more than 10 years since Asahi-machi became (new) Echizen-machi through a municipal merger. I bought it on a consecutive holiday in May and stored it at room temperature. A few days ago, I found a little bit of spilling. When I opened it, there was a slight push sound. When I opened it, there was a slight spitting sound. When I drank it, I felt a lot of gas! It's not a draft sake, and it doesn't say it's single-brewed (maybe even double-brewed)! Is it still fermenting? The gaseous sensation comes first, then the slightly limey bitterness, pungency, and spreading sweetness that appears from the bubbles. It's quite a strange taste, but it's delicious. Should I have drunk it chilled? How about warming it up? When you take it out of the microwave, you can feel the carbonation. It has a refreshing spiciness that comes out in the front, and a gorgeous sweetness. The taste is light and does not interfere with the flavor of the snacks, and does not make you tired. This is a good sake for warming up.
