When served cold, it has a gorgeous, clear sweet/tart acidity, with a subtle bitterness that keeps the taste clean from start to finish.
On the second day, the sourness and bitterness suddenly settle down, and it has a surprisingly easy-to-drink sweet-tart flavor.
Both are unquestionably delicious, but I prefer the first day's taste.
