Himenoi by Ishizuka Sake Brewery in Niigata, which I first decided to pursue when I started drinking sake. I had to check it out because it was available at Yoshiike.
I bought a four-pack of Ishoni because they had a four-pack in stock.
I got the impression that Himenoi is a sweet sake made with glutinous rice and brewed in four stages.
It did not have much of an aroma, and I had a feeling it would be sweet. When I drank it, I found that the sweetness came quickly, followed by sourness. The aftertaste is also sweet with a little sourness. Finally, there is a slight bitterness from the alcohol. The sweetness of the rice comes through well in this sake.
I was drinking Misen at the same time, but I prefer Himenoi because it is thicker and not only sweet.
