This is a sake brewery located in Kame-take, famous for Seicho Matsumoto's "Vessel of Sand". It is a new brewery, founded in 2004.
It has a faint aroma of koji malt. It is described as having a "clear and dry taste," but it has a strong bitterness that is not so much "light and dry" as it is "light and dry. The underlying flavor is umami. This is a modified Hachitan style. We need to compare it with other modified Omachi and Gohyakumangoku.
We had it while watching AIR. I thought it was a simple movie, but it drew me in. The 80's western music played during the movie was 👍.
