First, the sweetness of Yamada-Nishiki comes through. The firm acidity of the yeast's natural yeast brings the whole thing together. The four-stage brewing process gives it more depth than the numerical value. The aftertaste has the aroma of wooden vats and the lightness of the 15 degree range. It feels like a summer sake.
