The aroma was mild, with a hint of a cask sake flavor. When I put it in my mouth, I felt a surprising acidity despite the fact that it is a junmai sake.
The aftertaste is rich and has a touch of spiciness. The aftertaste is long.
It becomes even more relaxing when heated. The umami spreads gradually.
Kumamoto Prefecture tends to have a lot of rich, mellow sake in Kyushu, which tends to have a sweeter flavor. However, compared to other areas, Kumamoto has a unique junmai sake flavor.
