The young brewers grew the rice themselves. The label is refined and lean, suggesting an entire field of beautifully grown rice.
The aroma, which seemed quiet at first, is juicy like grapefruit in the mouth. The sweetness of the rice swells, and the crisp acidity and bitterness finishes it off. The impression is similar to Kuramoto Shuzo's KURAMOTO64 Yamadanishiki, with a frightening degree of perfection.
It is not too sweet and has a nice finish, so it is a perfect match for Japanese food as well as rich Chinese dishes such as sweet-and-sour pork and shrimp chili.
