After the sweet melon flavor characteristic of Shinmasa, the fine carbonation leaves a sour taste on the palate. It is a bottle with the theme of dry, lees-free sparkling, and it is exactly as it should be, with a full-bodied aroma that is typical of Shinsei.
However, as mentioned at the beginning of this article, the carbonation is very fine, leaving a sour and slightly bitter taste on the tongue. It is easy to see why there are so many sweet nigori sparkling wines.
Incidentally, like other Amaeru Frogs, it undergoes a tremendous secondary fermentation in the bottle, making it the most difficult to handle. It is a charm that it explodes in the refrigerator.
