I've never drunk Eikoh-fuji before. This season, I bought a bottle of Shiboritate.
The sake rice is Miyamanishiki. The aroma is fruity, just as they say. It has a tangy and gassy taste.
It's not too sweet, and I felt it was well balanced, but I also felt it had a bit of weight to it, which is only possible with unpasteurized sake.
If you let it sit for a few days, it will become less angular.
