Melon-like top notes
Very thick texture.
Fruity sweetness, but with a rich, slightly matured flavor.
Soft and mellow, with plenty of thickness and a lingering umami aftertaste.
The overall acidity is still there, and it is wonderful that it does not lose its flavor.
Even hiyaoroshi is easy to drink with this much sweetness and acidity.
The aftertaste is a little strong, but it is very good as a food sake.
Match it with slightly thicker mushroom stew.
