The aroma was of dairy products. I thought this was a characteristic of sake made using the traditional sake yeast yeast.
The taste was impressive with a melon-like tangy flavor followed by a crisp dry taste. It also had a slight alcohol taste on the palate.
The aftertaste is a little bit dry. I can feel a little bit of a tangy (umami?) aftertaste. It was a good sake, although it was not for me.
