I opened a bottle of Yonotori, which I had purchased in the summer, at home on Christmas Day. It is a quintessential sake, well-balanced and not too sweet for a noble sake. The description on the back of the bottle, "The very ideal Yonotori," was a good description.
Both koji rice and kake rice are polished to 60%, the alcohol content is 13%, and this kijoshu is made from Akita rice.
