I was told that this sake was brewed by a local development cooperative in Shiwa-machi, Iwate. I bought it because it is very interesting.
When you drink it, you can taste the sweetness and acidity very well. The sweetness in particular lingers in the aftertaste. It has a soft texture and is very pleasant on the palate. I like it very much.
Pairing with Ate
Sweet and sour pork
Shumai (pork dumplings)
Sashimi with pickled bamboo shoots
