<Almonds, a hint of melon, sweet and fluffy. The aroma is almond + rice sweetness. The Junmai Daiginjo also had a peanut-like nuttiness, but BLACK has a slightly stronger almondiness to it. In the mouth, there is a slight melon sweetness. From there, the sweetness swells a little, while a moderate acidity and umami also appear. The complex sweetness, umami, and bitterness are pleasant. It is a quiet and cute little guy. But when I paired it with chicken liver, it was delicious. It is quiet, but has a solid core. As it warms up a little, the acidity asserts itself a little bit, which is also cute. If I were to use a Ghibli analogy, it would be Yuko from "From Up On Poppy Hill. She is a friend of Umi, the main character, and is the girl who eats anpan (buns). I thought she was a quiet and weak character, but then, near the end of the film, she starts singing solo in the chorus scene! It was pretty ballsy of her to sing solo in that situation.
