When it was first sipped, it was hard and had little acidity characteristic of SENKYO, giving it a classical rather than modern feel.
However, a few days after opening, it opened up and gradually developed its umami and characteristic acidity, becoming delicious like Sengkyo. The mouthfeel is mellow, soft and delicious.
However, I prefer Organic Naturals and Seasonal Sake among Sentori.
