Shinmasa/Kijoshu/Yonotori/Torishiki × Shinmasa (Sakenomy limited) 5.0 Purchased at Sakenomy lottery sale. I was so grateful that I let it sit in the refrigerator for almost half a year (lol). It is a bit expensive at 4,020 yen including tax. But definitely worth the price. It can be sold overseas as well. The bottle design is also cool. It is sad that I don't have a chance to drink it very often. This is too delicious. Despite the fact that it is a kijoshu, it has a great acidity and bubbly taste, while still maintaining its umami and sweetness. It completely overturns the image of kijoshu. If you want to drink it, you should pour all your energy into it on the first day when the bottle is opened, when the fizziness is strong. At the same time, be careful what you serve it with. Since this sake is too assertive, avoid pairing it with delicate dishes such as Japanese food and sushi. It should be paired with dishes with strong flavors such as yakitori and Chinese cuisine. The flavor of the wooden vat will follow. It is not too much to say that this wine is a top compatible with Kumamoto's "Sansho"! Definitely goes well with high-end yakitori such as Tori Shiki. It was too good to be served at home (laugh). It has been a long time since I drank Niimasa at home, but it still stands head and shoulders above other brands in terms of "overall strength. Not only the taste, but also the design of the label and bottle is on a higher level. Shinsei is always evolving.
