Apart from the all-you-can-drink, this is the drink that was recommended to me for the closing drink. One cup costs 1,000 yen! Chihyo from Mizutani Shuzo, a small brewery in Aichi Prefecture. It's a rare sake that only three breweries in Japan (including two in Tokyo) distribute it. It is a beautiful and clear sake with good acidity and umami. It's easy to see why the staff at the shop fell in love with it and recommended it to us.
