The aroma is a deep ginjo aroma, ripe melon. Sweet mochi and kompeito. There is also a little hiney aroma.
In the mouth, you can feel the sweetness like a dried persimmon with a sense of maturity, and the taste of heavy rice.
There is also a slight unique flavor of koji mold.
As you swallow, the bitterness and spiciness gradually tighten and the sweetness is suppressed and rises.
The aftertaste is surprisingly crisp.
Cold sake has a sense of maturity and a complex sweet and savory taste.
It is also excellent when warmed, giving a profound yet calm impression that can be savored carefully.
