This is a limited "Midori" version of a raw sake made from Akitsuho, a symbol of Kaze no Mori, produced by Aburanaga Shuzo in Nara Prefecture.
This is a limited edition sake only available once a year.
The sake is bottled from the middle part of the bottle, where the Arabashiri and Tameshi parts are cut off.
It is a special sake that has a great balance of umami and acidity while maintaining the voluminous umami that is typical of Kaze no Mori.
The name "Kaze no Mori" comes from the Kaze no Mori Pass located in the same city.
It is said that the area near the pass was the earliest place in Japan where rice cultivation was carried out. The Kaze no Mori Shrine, whose deity is Shinatsuhiko, the god of wind, is enshrined in the nearby forest to pray for a good harvest by avoiding the wind that blows strongly from the foot of Mount Kongo.
