Today's Sake is a limited Kimoto Junmai Ginjo from Tanaka Shuzo in Hyogo. This starts with the aroma and flavor of pear with a dry finish. The Kimoto style of brewing adds richness (umami) to the flavor profile. The mouth feel is full and soft.
Nice and mellow like jazz music ... 🙂
