We went to Gunma to buy this sake.
The rice is polished to a very low level as the name "88" suggests. I'm curious about it. And it is unfiltered raw.
The first sip of the bottle. There is almost no gas, but the flavor of lactic acid flows into the mouth. And is there any miscellaneous taste of low polished rice?
No, there is no weirdness, it's just the rice itself. It's delicious.
It is thinly stored at ice temperature and smooth. Although it is an unpasteurized sake, it is made lightly at 14 degrees. The sake itself is a bit battery-heavy, but it is well balanced.
The yeast is "Gunma KAZE No.2". It produces a cap and acidity, but it is not unpleasant.
As a result, it is quite a favorite as a low-milling sake. There are some breweries that set a high price because low rice polishing is a difficult technique, but I don't care. The Left Minister 88 is a special sake that costs 1,100 yen even if it's pure rice raw!
It's been a while since I gave it 5 stars!
