A new sake for me, Hakuin Masamune from Takashima Shuzo, Numazu City, Shizuoka Prefecture. I only know the name of this brand. What kind of sake is it?
The aroma is faintly alcoholic. There is no hint of sweetness at all. It seems to be pure dry.
On the palate, it comes in smooth, and only the umami and alcohol taste spreads out. There is a slight sourness at the beginning. There is only a hint of sweetness at the back, but the taste is not sweet at all.
It's like a classic sake that doesn't care about trends at all. It is beautiful. I would like to pair it with fish. It is good with sashimi, grilled fish, and boiled fish.
