I bought it again this year, limited edition sake from Kuheiji 😉.
Purchased on May 26 💸.
I was told it would be ready to drink from June 2 to June 11, but I opened the bottle flying on May 29😅.
Opened the bottle with a nice sound 🎉!
The fruity aroma was hard and acidic. There are still a few days to go before it's ready to drink, so let's wait for it to ripen like the label says!
June 3: The bottle opened with a nice sound as usual.
Almost ready to drink. The hardness has been removed and the wine seems to be mellowing.
June 5: The acidity and bitterness are still strong. However, compared to the first sip, it has a more robust mouthfeel.
I wonder if I can keep it for a few more days 😁.
