Citrus and fresh, rich flavor
A slightly sweet and bitter acidity. It has a slightly refreshing citrus acidity and a nigori-like sweetness and bitterness.
From there, the sweetness and bitterness gently fade away. It is gentle but rich in flavor. Chestnuts and rice flowers are also soft and fluffy. It is delicious.
The entrée was cheese marinated in miso, which I had just had the other day. It is an iron plate. The gentle richness of the cream cheese, the slightly tasty miso paste, and the accompanying wasabi are a perfect match. It goes well with sake.

The main character in the Ghibli movie, "Ears to the Past," is called Shizuku. She is sweet, cute, fresh, and a bit troubled. It is a coincidence that the rice is Nishitoshizuku. It is a scene where she is struggling with her creation because of the bitter taste.
Satisfaction: ★★★★
