I bought it before as a souvenir from Kinugawa. I was wondering why "Sake-no-wa" is written in English... 👀 When you open the bottle and pour it, the aroma has a graininess to it. The palate is clean and the main taste is spicy and acidic. However, there is also a sweet umami flavor from the rice, which gives it just the right balance of sharpness and flavor! The flavor is not too prominent, so it can be enjoyed on its own or during a meal! The acidity lingers on the back of the palate, which, despite the umami that can be felt, finishes it off crisply. While drinking it, I was looking up the name of the brewer, which is the same as that of "Sagata! The combination of sweet, spicy, and acidic flavors is a masterpiece ✨.
