I bought a bottle of Lapis that had been aged for a year and a half at the brewery and a year at the liquor store. In fact, I wanted to buy the one which is not aged, but it is not easy to get Lapis. (Because Lapis will not be sold from next year.)
The light blue is only a little yellow. But it is almost transparent and beautiful.
The aroma on the top of the bottle is a fresh green apple that is typical of Shinsei, but you can also feel the thickness.
In the mouth, even though it's been two and a half years since it was matured, you can feel a sense of gas because of the strong acidity. Thanks to this, the freshness continues all the time, and it cleanses the inside of the mouth.
This is a sake for eating. In fact, this is the sake that got me hooked on sake, and I had it with the best sushi at the time, so I have that image in mind.
My image of sake completely changed when I drank Shinsei in October, and since November I've been drinking a lot of different kinds of sake, so I honestly feel that there's no need to stick with Shinsei Lapis. Because there are many other good sake.... I think Cosmos is definitely stronger in terms of umami than any other Shinsei. It's good to know that I've grown as a person.
However, it still tastes like a Shinsei, so I think it has a great sense of uniqueness. It tastes different from Yukino Bijin, which uses the same 6-gou yeast...

Good evening, honda-san! President Sato told me three weeks ago! He said he was growing a different type of sake rice to develop a different type of sake, and that he wasn't planting Miyamanishiki this year, so there would be no harvest and it would be sold out next year!
