This junmai sake is brewed in a traditional "nama-moto" sake mother using an ancient technique. The involvement of various microorganisms such as lactic acid bacteria and nitrate-reducing bacteria produces a more complex, multifaceted, three-dimensional flavor.
Designed at 55°C, it has a mild, yet firm profile. It has a sense of maturity and a slightly Shaoxing-style flavor.
