My first Yukino Bijin. Akita Jozo brews it on the first floor of an apartment building just a 5 minute walk from Shinsei Shuzo. This sake was brewed with the 6-gou yeast from Shinsei. This is the first time for me to try Aizan. By the way, this is my first time to try Aizan. The color of the water is slightly yellow, but rather clear. The viscosity is a little strong. The aroma is banana-like and you can feel the alcohol. But it's not sharp, it smells like it's been rounded up and wrapped up. When you put it in your mouth, a wave of flavor comes in with a zing. This is the first time for me to taste Aizan, but this is delicious...! Aizan is something to be feared. And the way the flavor rides and the way the aroma spreads in the nostrils is just like Shinsei. I was reminded that this is the power of the 6-pack yeast. If you drink it continuously, you can feel a little bit of gas. Just by changing the way you drink it, the sourness becomes a little more prominent. It's delicious.
