Bodai-zen is a sake brewed in a jar without the traditional brewing process.
It's a kind of Bodo sake.
Sake strength of -31 and acidity of 10.9, just like the sake mother.
Although it is less than a year old, it looks and smells like an old sake!
It has a thick honey-like aroma like a particularly matured kijo sake, and it looks very sweet!
The taste is quite sour.
I expected it to taste sweet and sour, but there was almost no sweetness.
It's just like drinking vinegar, as it's a sake that doesn't go bad even in the summer!
It's not that it's bad, but rather that the more you drink it, the more addictive it becomes, but it's definitely a very selective drink.
It may be more approachable to wine drinkers than to sake drinkers.
