Let's start with 2020.
The aroma is of rice with a noble alcohol taste. Ahhh, this is a high-class sake.
In the mouth, the rice flavor is sweet and lactic acidic. The sweetness is further enhanced by the lactic acidity. It is a classic high-class sake with a clear sense of alcohol. It cuts off beautifully, and the fragrance is elegant and soft.
The fruity flavor is subdued, and the mouthfeel is soft with a firmness.
It is like Ashitaka, the main character of "Princess Mononoke" in Ghibli. He is hard, cool, and has a strong will and power.
