Tochigi sake made by a liquor store in Itabashi.
Fujisawa-ya wanted to make a local sake.
However, the local brewer was not available, so he asked a brewer in Karasuyama, Nasu-gun, Tochigi Prefecture.
With the idea that "Jizake" means "Local Sake", we worked on the creation of Jizake and designed the sake quality.
The brewing process, maturation period, environment, etc. were discussed, and it is said that this sake was made.
It seems that there are still some sake breweries in the neighboring Kita Ward.... As a Tokyoite, I'd like to drink more of Tokyo's sake than Sawanoi.
