Chokki
Yamazakura Momo Junmai Daiginjo-shu Unfiltered Nama-zu
Traditional old-fashioned honjikomi (15-16%), 40%.
720ml 3000yen
Purchased at Sudo Honke in Ibaraki Prefecture, which Rokkaku-san also visited. The garden is magnificent and gives the impression of a historical brewery.
The name of this sake is "Yusura," which means "mountain cherry peach. It is made from Kame-no-o Koshihikari rice produced locally in Kasama City.
The first sip after opening the bottle at home.
It is a draft sake, but there is no gas. It has no sweetness or umami, and for a moment you think it has no taste.
The acidity is also low. It has a refreshing taste with lemon-like acidity. It is light but not too spicy. The sake seems to be hard. I am not sure about the depth of flavor.
My father said it was surprisingly good sake when he had a sake party 10 years ago, but his reaction was not so subtle.
It is a clear sake that does not interfere with food, so I thought it would be a good match for sashimi.
The price is expensive at 3,000 yen for 720ml.
The website says it will "wow sake connoisseurs. I am not quite there yet.
