Yamata-no-orochi, a giant serpent with eight heads and tails.
This is Junmai Ginjo Yamatanosugata, brewed with 8 kinds of good sake rice.
Now, the top note is a fruit aroma with a hint of sweetness.
When you put it in your mouth, there is a little bit of tonicity, alcohol, and spiciness, and then the heavy bitterness and rich sweetness spread out. This bitterness and sweetness leave a long aftertaste. I did not feel much acidity. I can't think of any sake that is similar to it.
It is a sweet sake with an assertive bitterness. We enjoyed it very much.
