The taste was clear and free of cloying flavors due to the 45% rice polishing ratio. As this was my first time to taste Junmai Daiginjo, I was very impressed.
It is said to have a gorgeous aroma and a mellow, full-bodied flavor. In fact, when I drank it, the outrageous umami flavor spread to my mouth, and I would have been immersed in the lingering aftertaste for a minute. I was also pleased that it was a bit dry.
The aroma was also very nice, but I was disappointed that I did not notice the gorgeousness.
Also, I may be mistaken, but it seemed to have a slight acidity.
